These are the first gluten-free cookies I've actually finished in one sitting, the vanilla creme layer is generous and the wafers stay crisp right to the last bite. Even my non-keto husband kept stealing them from the bag.

The vanilla creme filling is nicely sweet and the wafers hold up well without crumbling, though they're a bit drier than traditional ones. For a keto snack they do the job, but I'd probably reach for something with a softer texture next time.
