These wafers are dangerously easy to finish in one sitting—the raspberry filling is tart enough to balance the crisp, light layers. I was skeptical about a vegan cookie with no added sugar, but the fruit sweetness carries it perfectly.
I’ve been hunting for a treat that doesn’t spike my sugar guilt, and these hit the spot—the wafer layers are genuinely light and crisp, with just the right amount of raspberry jammy-ness. No added sugar or erythritol, yet they still taste sweet enough to feel like a dessert, not a compromise.
The raspberry filling actually tastes like real fruit, not that fake candy stuff, and the wafers stay crispy right to the last cookie in the box. I keep grabbing one every time I walk past the pantry, and honestly the fact that there's no sugar crash after is a huge win for me.
